Lemon balm syrup from the garden 🍋🌿 Last year I gathered a handful of fresh lemon balm, chopped the leaves, covered them with around 400ml of water, and left them to infuse overnight. The next day, I strained the liquid, added an equal amount of sugar, gently heated it, and bottled the syrup. Lemon balm has long been valued in herbal traditions for its calming and uplifting qualities, often used to support the nervous system, digestion, and relaxation. Its fresh citrusy flavour works beautiful
